Why Shenzhen Bay for Nanshan
From the airport, the road to Shenzhen Bay runs through western New Territories and avoids central Kowloon. After clearance you are already in Nanshan, so the Mainland leg is short. When queues are long, dispatch may suggest another port; the route is confirmed before departure.
